Farm-fresh eggs have always been known to be healthier and tastier than store-bought eggs. With recent economic and health concerns, farm-fresh eggs have become much more in demand. There is a learning curve when moving away from store bought eggs!
Unwashed eggs will last in the refrigerator for about 3 months. Washed eggs will last in the refrigerator for about 2 months. This can be surprising to people used to store-bought; eggs in the store are generally over a month old and are nearing their expiration date by the time they make it to customers!
Our eggs have been refrigerated, but are unwashed, in order to keep the protective bloom intact - once refrigerated, the need to stay refrigerated to maintain the bloom.
Do not wash eggs until ready to use. Before using, wash in warm water - no soap! A simple silicone egg scrubber is a great tool.
When using farm fresh eggs, it is recommended to crack each in a separate bowl in case of abnormalities

We are concerned about the spread of avian flu and have increased biosecurity measures. We have committed to not bringing in any more birds - we will be hatching our own to grow our flock. Our flock has very limited free-range time, and they don't stray far from the barn when they are let out. Additionally, they do not have much roofless space in the run to have contact with wild bird droppings, the main concern for flu if there are no new birds brought in.
We keep a close eye on our flock - much more than moneymakers, the girls are our pets, and their health and wellbeing is of utmost importance to us. Any birds that we have lost (which has not happened in a year), we take to the Animal Diagnostic Laboratory at Penn State for complete necropsy testing. We have never lost a bird to anything but natural causes.
